O Nicky palmilhou o seu caminho pelo departamento de catering da companhia aérea transportadora irlandesa Aer Lingus até chegar ao posto de Chefe de Catering, o qual deteve até deixar o negócio em 2002 para formar a Onboard Logistics.

A sua vasta experiência no catering de companhias aéreas, adquirida quer a Irlanda como na América do Norte, dá-lhe um conhecimento inigualável das exigências colocadas na tripulação em termos dos desafios de catering a bordo que as companhias aéreas enfrentam. Ele criou a Onboard Logistics para resolver esses problemas.
O Nicky tem experiência como gestor sénior de RH e foi responsável pelas negociações de contrato com os fornecedores. Portanto, ele compreende o processo de assinatura de contratos de aquisição com as companhias aéreas.

O Nicky fez parte de muitos projetos de corte de despesas introduzidos durante os anos mais difíceis da aviação. Um desafio particular foi a substituição de Primeira Classe por Classe de Negócio sem perder um único cliente.

O Nicky projetou a gestão, a partir de uma perspetiva durante o voo, da introdução da frota Airbus na Aer Lingus.

A capacidade do Nicky para maximizar as receitas, espaço e atendimento ao cliente fazem com que ele seja um perito no design de cozinha.Por exemplo, para poder lidar com as exigências de fornecer um serviço de classe de negócio num voo de 45 minutos entre Dublin e Londres, ele teve a ideia de uma cozinha molhada na porta dois no A321.
